Cooking

Cooking is the act of preparing food for eating by the application of heat. It encompasses a vast range of methods, tools and combinations of ingredients to alter the flavor or digestibility of food. It is the process of selecting, measuring and combining of ingredients in an ordered procedure in an effort to achieve the desired result. Factors affecting the final outcome include the variability of ingredients, ambient conditions, tools, and the skill of the individual doing the actual cooking.

The diversity of cooking worldwide is a reflection of the myriad nutritional, aesthetic, agricultural, economic, cultural and religious considerations that impact upon it.

Applying heat to a food usually, though not always, chemically transforms it, thus changing its flavor, texture, appearance, and nutritional properties. There is archaeological evidence of roasted foodstuffs, both animal and vegetable, in human (Homo erectus) campsites dating from the earliest known use of fire, some 800,000 years ago[citation needed]. Other methods of cooking that involve the boiling of liquid in a receptacle have been practiced at least since the 10th millennium BC, with the introduction of pottery. [c

Cuisine terminiology

Terminology

  • In the United Kingdom, the term "Asian cuisine" generally refers to the cuisine of South Asia, such as Indian cuisine.
  • In the United States, the term Asian Cuisine usually refers to cuisine from the countries of east asia (particularly Chinese, Japanese, and Thai). The usual dining term is to go out for "Chinese food", "sushi" or "Indian food". In particular, the term Chinese cuisine is automatically assumed to be American Chinese cuisine. Authentic Chinese cuisine is rare in the US. Being authentic, it is not known to employ the use of lobster meat. They are exclusive to urban districts with high Asian population such as Chinatowns. Even so, not every Chinatown serves authentic styles.

Cuisine

Cuisine (from French cuisine, "cooking; culinary art; kitchen"; ultimately from Latin coquere, "to cook") is a specific set of cooking traditions and practices, often associated with a specific culture. Religious food laws can also exercise a strong influence on cuisine. A cuisine is primarily influenced by the ingredients that are available locally or through trade. For example, the American-Chinese dish chop suey clearly reflected the adaptation of Chinese cuisine to the ingredients available in North America.
